Kickstart breakfast for busy moms


Remember busy mom? How it felt like to have the time for an easy breakfast before you had kids? Alright, there will of course be a group of super organised moms who are able to set their alarm an hour earlier to start the day slow with a cup of coffee, a meditation moment and a session with the curling iron. I know that they exist. But raw mother life is usually a bit different in this chaotic part of the day. After a night with just a few hours of sleep due to baby teeth that are coming through, you have to drag yourself out of bed to get started with daipers, clothes, making sandwiches and cleaning spilled milk. Time for a proper breakfast is difficult to manage. You are glad when you are wearing two socks that look the same and when a bit of mascara made it to your eyelashes. Therefore, I give you three breakfast suggestions to make sure you can start the day with a happy stomach.



Allow yourself something extra

A sandwich with pinut butter is quick and easy. And a morning recipy for healthy banana pancakes with ahorn sirop, blueberries and fig compote are a lot of work and expensive. The trick is to make is easy for yourself. And to keep the ingredients on the medium rated price level. But allow yourself something extra in the morning. Are you craving fresh strawberries, then just buy them and eat them on toast of in your yoghurt in the morning. You deserve it, you work hard enough for a little extra (preferably healthy) treat. And moreover, a good breakfast is extremely important for your productivity during the day. So make sure you invest in your breakfast, to boost both your physical and mental energy level.


Plan

The most important tip is to make sure everything you need for your breakfast is on hand.

Not everyone has multigrain pistolets, ripe avocado's and pecans in their cupboard on a daily basis. Make is as easy as possible for yourself is the drain. Think about what you like to eat (for instance one of the recipies below ;-) and make sure you have the ingredient at home. It must be easy to grab everything within a few seconds and recipies shouldn't be complicated. Not in the morning at least. So, make things easy and use for instance honey if you don't have maple syrup or ahorn syrup.


The next recipies will take you less than 5 minutes to kick-start your day!


Breakfast 1 - Coconut yoghurt with blueberries and walnuts

Ingredients:

  • Coconut yoghurt

  • Granola or cruesli

  • Fresh blueberries

  • Optional: also rasberries

  • Walnuts

  • Honey

Directions

Poor the yogurt in a bowl and top it with the fruit, walnuts and honey . That's right, so easy!



Breakfast 2 - Overnight oats with banana, coconut and honey

Ingredients:

  • 1 cup of old fashioned rolled oats

  • 1 cup of milk

  • Sprinkle of vanilla sugar

  • 1 ripe sliced banana

  • bit of grated coconut

  • Honey of dade syrup for topping

Directions

Easy! Combine the oats, milk and sugar in a jar. Let sit overnight in the fridge. The next morning, put in a bowl, warm it up in the microwave for a few seconds and top it with banana, coconut ... and a bit of honey (or dade syrup as I used here).



Breakfast 3 - Rusk with avocado, tomato and balsamic

Ingredients:

  • Multigrain or whole grain toast

  • 1 tbs of mayonaise (low fat if you like)

  • 1 ripe avocado

  • A few little tomato's

  • Salt and peper to season

  • Balsamic dressing (creme) for topping

Directions

Spread a bit of mayonaise on your multigrain toast. Slice the avocado and tomatoes. Put them on top and season with salt and peper. Dress is with a bit of balsamic creme. Bonne appétit!
